Ingredients (Makes 1 cup)

1/2 cup red wine vinegar

1/2 cup vegetable oil (Can substitute with extra virgin olive oil)

1 clove crushed garlic 2 teaspoons white sugar (Substitution: 1 teaspoon honey)

1/4 teaspoon dried oregano or basil

1 teaspoon salt

Preparation Combine all ingredients except the oil in a small bowl, then whisk in the oil. Add ground pepper if desired. If time allows, let marinate for 15 minutes.

Salad Ingredients:
Greens: Spring mix, spinach, arugula or any favorite leafy greens
Vegetables: Cucumbers, olives, tomatoes, green peppers and/or onions
Optional: Meat-chicken
