Recipe: Refreshing Citrus Dressing

Ingredients (Makes 1 ¼ cup)

2/3 cup rice wine vinegar

1/3 cup orange juice

2 tablespoons extra virgin olive oil

2 tablespoons chopped fresh cilantro

1 tablespoon Dijon mustard

2 teaspoons minced garlic

1 teaspoon honey

Preparation Combine all ingredients except the oil in a small bowl, then whisk in the oil. Lightly season dressing with salt and pepper if desired. If time allows, let marinate for 15 minutes.

Salad Ingredients:
Greens: Spring mix, spinach, arugula or any favorite leafy greens
Nuts: Roasted/Caramelized walnuts, pecans and/or almonds
Fruit: Peeled, sliced mango and avocado
Optional: Meat-crab, shrimp or salmon
