Ingredients: (Makes 1 cup)
1/2 cup vegetable oil (Can substitute with extra virgin olive oil)
1/2 cup raspberry wine vinegar (Substitution Option #1: Raspberry balsamic vinegar and reduce sugar to taste. Substitution Option #2: Red wine vinegar and white wine vinegar and add pureed raspberries to taste.)
1/4 to 1/2 cup white sugar to taste (Substitution: 1/8 to 1/4 cup honey)
2 teaspoons Dijon mustard
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 tablespoon poppy seeds
Preparation
Combine all ingredients except the oil in a small bowl, then whisk in the oil.
If time allows, let marinate for 15 minutes.
Salad Ingredients:
Greens Spring mix, spinach, arugula or any favorite leafy greens
Nuts Roasted/Caramelized walnuts, pecans and/or almonds
Fruit Dried cranberries, and/or fresh berries of choice
Cheese Crumbled feta or blue cheese
Optional Meat-chicken
